Dried Beef and Scalloped Potatoes
INGREDIENTS:
- 5 or 6 med potatoes
- 2 tbs butter
- 1 - 4 small onions
- 1 4oz. jar dried beef
- 2 tbs. flour
- 4 cups milk
- 1 cup Ritz cracker crumbs
DIRECTIONS
Peel and slice thin [not chip
thin ] 5 or 6 med potatoes.
Melt 2 tbs butter,
Saute 1 small onion
[ I use 4 ]
Add 1 4oz. jar dried beef cut up,
2 tbs. flour,
Add gradually 4 cups milk.
Cook until thick and smooth stirring constantly.
Measure out 1 cup Ritz cracker crumbs.
Butter a large casserole dish.
Put in 1/2 of the potatoes , 1/2 of beef mixture, rest
of potatoes, then beef.
Sprinkle cracker crumbs on top.
Cover and bake at 350 degrees for about an hour,
Check to see if potatoes are done with a fork.
Serve and enjoy. |
